Kinlin XR31 TS 24x31mm disc rim
Kinlin RD-3FT 30x31mm disc rim
-> https://kinlin.com.tw/Dt swiss E550 26x30mm disc rim
Dt swiss A510 24x30mm disc rim (internal nipples)I like dt swiss 350 hubs (the branding used to be a sticker that could be removed, not quite sure about newest versions), solid, very low maintenance.
Change the rackets from 36t to 18t for a nice low noise hub.Edit: There is a 35mm deep aluminium rim under different names that I have not tried myself (expensive...)

These are really narrow but with not a lot of drop
HUP 32cm/34cm/36cm/38cm Compact Drop Handlebars
I found that the drops are a bit short. They work but I think they would be better with a 20mm extender on the end
I also have the FSA super energy compact bars in 360mm from the post higher up and the measurements listed are accurate. 360mm c-to-c drops, 350mm c-to-c hoods.
Fouriers Nanko 320mm 340mm
I have not tried this one because the drop shape looks bad for me, but maybe it works for someone else. I think you can find them or similar on aliexpress.
There are also these track bars! (Maybe you can fit some shifters on them, hard to guess from the drawings).
Velobike Track Sprint Handlebars 300mm,320mm,350mm
But very expensive... !

https://rec.bicycles.tech.narkive.com/1OIXhKT5/bottom-bracket-for-mavic-631-cranks
Halfway down the page there is a comparison of JIS, ISO & Mavic BB tapers.
Mavic looks closer to ISO.
I have a set of Mavic starfish cranks that I use with a 102mm ISO bb. But it is a singlespeed setup so that doesn't really help you. (41mm chainline)
My guess is a 114mm ISO bb or there about will work for you. (+6mm each side so the large chainring is at 47mm chainline)
Where should the chainrings be at campagnolo 10s? 40-47 (43,5mm)?

I’m assuming normal race spokes at a quarter of the price will work especially if you file down 1 side
If you mean making your own flathead (t-head) spokes out of normal straightpull spokes, you could use Damon Rinard´s method:
Just squeeze a straight pull spoke in a smooth jawed vise, Just include the first ~20mm of spoke wire in the vise too, then it automatically stops. A shop vise can't possibly provide too much pressure
I would not recommend filing spoke heads

It looks like this fork -> https://www.lfgss.com/comments/12652874/
so only 23-25 tyres
23mm durano on 18mm/24mm rimalso the fork is not very stiff, flexes a lot.

I have changed to shimano flat mount calipers+ hylex levers and it works fine. The pistons are 22mm diameter instead of 21mm so there should be a bit more lever throw (+10%), but I don't notice it and can't really remember how it was before.
There is also a hylex RS flat mount caliper which you could change to.
