The idea of a brick pizza oven is so much better than the reality. I built one 5 years ago, probably used it about 10 times. It takes bags of wood and ages to heat up, it's just a bit of a messy faf. It does look very cool though.
There are a few things I would do differently if I was going to build one again. Admittedly I did build it using reclaimed materials which maybe contributing to its poor performance.
The weather has got to it and it needs some repairs, it would cost about £800 to repair and improve it.
So I bought an Uuni Pro instead, it's a million times better. As you say very quick to heat up, you can just cook in it whenever you want. The brick you had to plan a week ahead.
I've got the gas and pellet burners but so far have just used wood and charcoal. It cooks brilliantly.
Pizza obviously, but I've done bread and even a leg of lamb. Still lots to experiment with I've only had it a week.

As IdealStandard mentioned, is all about the fridge, if you have a compressor you will be ok, but a condenser really eats the power. I had a chat with with a company at The motorhome show last year and they told me 130w would be best. We bought a cheap 150w folding panel from eBay, we ran off it for 4 days last weekend, 2 of those days were heavy rain. The battery never went below 3/4 charge. My advice would be to go for the biggest panel you can afford.

I’ve just been doing some research on this myself. Info online is a bit confusing isn’t?
I’m looking to run a compressor fridge, and the internal led lights. As well as iPad, phone charging etc.
I went to the motorhome show a few weeks ago had a chat with these guys. http://www.photonicuniverse.com
They told me a minimum of a 130 watt would be good enough, with a MPPT controller.
I’m going for a semi-flexible stick on panel as it will fit well onto my pop top.
But check your fridge is it a compressor or condenser as the condensers draw a lot more power. -
