For a lot of jams (berries, cherries) an easy way is to just cook them up on a pretty high heat with a measure of sugar (some say as much as half the fruit volume in sugar, but I use about an eighth to a quarter), constantly stirring, add some shredded apple (for pectin) and a few splashes of lemon juice. After 20 minutes cool it and jar it. Simple.

Check out Friedlingstein's and Toggweiler & Russell's articles in this http://www.nature.com/nature/supplements/collections/yearofplanetearth/ issue of one of the most respected journals of the natural sciences. Who is likely to be correct, research scientists working in the field publishing peer reviewed articles, or an upper class politician dabbling in a field he has no education or training in?
