It won't notice the difference between 29 theoretical max and 30. At the time there was only a 29 tooth cassette so that's why it's spec'd as the max. Medium cage is plenty long enough for the wrap you need....else get a veloce 13-29.

I have a SUrly 'new' rear fixed hub wih surly 7901 bearings. (deceased)
I have a few questions if anyone can help.

The Surly bearing haven't been that great and no one stocks them anyway, so I'll have to order something and thought I'd step up a bit in quality.

1) How do i remove the bearings? They seem pretty tight in the hub case (I have removed the axle etc. I'm only a partial fool!)
2) Phil Wood's website says his PWX01 bearings are the right replacement and others recommend his bearings. In other places I have seen these specced as 6901 bearings which aren't the same as 7901. So is there any problem here?
3) If they are ok where can I buy some in the UK?

Should read "stem" obviously! I think it is form around 1989. How do i get it off?!!!

The cover is missing.....and then there's the tube thing sticking out backwards......i can put a hex wrench in and it seems to locate ok...but i turn it either way and nothing seems to happen...what's the normal way to get these stems out? In a normal quill stem you have to to push the bolt and thereby the wedge down, or even knock it with a mallet...how do you do that with this type of stem?

25cm steerer, 1" . Brake bolt to axle 38cm, so need longish drop brakes with 700c wheels. . Threaded down to 10cm from bottom race so could be cut for almost any frame

Forks are odinary steel and have only done about 200 miles. Headset new and unused.

It is the modern rear spacing....130mm or whatever......It is 27mm seat tube, not 27.2mm so slightly more difficult to place, but i am including the seat pin anyway.

I would prefer greatly to hand it over for cash rather than mailing it.. I live in west london w11.
