For what it's worth, I'm 6ft with a 86-87cm inseam and ride a 58cm V3.0 Wolverine. 90mm, -10° stem with 40mm of spacers. I was about to go for a 56, but LBS advised me to go for a 58 as it was intended more for touring than for racing. After two years of long days in the saddle it feels about the right choice. Also tried his 58 Double Cross at the moment, which helped to make my choice.
Concerning brakes, I use cable-actuated hydraulic Yokozuna Motoko. They work great, nice modulation, plenty of stopping power, easy to maintain. I recently mounted Juin Tech R1 that are identical for half the price on another bike (you have to get Yokozuna Reaction housing separately though).

From what I've read here, I understood that a Son Rear Light wouldn't work on a Supernova E3 Pro 2.
Would a SON Rear Light DC for Pedelecs work? -

I'm tempted with the new WCS Adventure Carbon fork from Ritchey.
1 1/8 straight steerer, 15mm TA option and cargo cage mounts make it an ideal candidate for the Wolverine despite the 393mm A-C, which is 10mm less than the Soma Thru-Axle CrMo fork (same rake). Does anyone have experience with Ritchey forks? Or does anyone know how it will affect steering and/or overall behavior of the bike? -

I've had the Ritchey Adventure on my mind for a year now but I was quite worried about the A-C, plus I'm running a Chris King headset which wasn't compatible until now: https://eu.ritcheylogic.com/eu_en/36-degree-bearing-adapter-for-ritchey-wcs-carbon-adventure-fork. This adapter adds 4.4mm to the fork making it ~397mm, which was the A-C of the original Wolverine QR disc fork, I will probably try that next autumn and will report here.
