Yeah it's a lot to do with the mindset I think. The perceived inconvenience of taking 3 trains and paying more, for me, are outweighed by faaaar lower emissions per person for the entire journey when compared to flying, and, honestly, the slightly masochistic fun factor. I just like trains too.
It's definetely not objectively easier to travel by trains with bikes in bags accross Europe. But I'd rather leave part of my rational persona at home, try to relax, not give a fuck, and put up with sometimes shit but overall fun experience of train travel with a 30kg+ bag. -

We followed Seat61 itinerary: 05:40 London - Paris, 15:55 Paris - Munich, 23:20 Munich - Ljubljana (arr 6am).
Eurostar - take the bikes (in bags) to EuroDespatch in St. Pancras 24hr before.
France - you will be boarding an empty train, take them to upstairs to the fairly generous luggage storage area - there are places where 2 Evocs fit perfectly
Night train from Munich - Ljubljana is operated by Austrian ÖBB (oebb.at) so best booked through their website (as opposed to Bahn.de). Yeah, total PITA as platypus described. I would call them up (very helpful and perfect English) and explore other timing options to avoid the sleeper train. The website does have a filter for "traveling with bikes" and I want to trust it, but maybe talking to someone experienced could be of value.

To add to what @platypus said - on an Etrex, this works best if you're following a track (not a route. In Garmin's terminology), then at any time you can use Where To? to route to a cake shop, etc. This doesn't mess with your ride stats, the track stays visible too iirc.
By the way what RWGPS calls POI, Garmin calls Waypoints. edit: if when exporting you tick this option... Any difference anyone knows? I'm confusing everyone now...
Also, don't forget to "Reduce to 500 points" when exporting a track from RWGPS for use on an Etrex.
Supplemental smartphone use is essential, unavoidable really.This question made me look up what Wahoo Element Bolt is capable of (noob here). If you're following a route, then for an optional detour you have cancel the current route. At least the ride stats are preserved (it's all about stats innit?).

Have a set of 5700 shifters (pics). Got them off the forum not long ago, shifting was fine with the bike in the stand, but I opted for a Sram system with a clutch RD so did not end up using the these. £40

Also can't tell if you're not happy for some reason and selling it now? Is it the handling with those flat bars? I found that a 100mm stem even with swept back flat bars handled... weird. Like it just became too lazy. I think drops work best, leave the rigid MTB setup for some other bike. -

Yes, IS to Post adapters. They are specced for certain rotor sizes so include 140 in your search.
Surly have a FAQ section where people asked the same question. They all mention 160mm rotors though so not sure if 140mm will work (unsolicited opinion: personally would run 160 especially if you're bikepacking/touring offroad).
