Hi there. New to the world of fixed gear and doing a custom build - need a wheelset and these seem perfect. What is the difference on the hubs to justify the price difference?

Just embarking on my first bike build - have tinkered with my bikes for ages but never done a build from scratch. Want to end up with a fixed gear for road use on my commute - have got an old frame and now looking at crankset, wheelset and bars. Is there somewhere I should look for advice etc? For example, rear hub needs to be 125mm, but how easy is it to add spacers? And how difficult is ensuing a straight chain line?
