Haven't taken them out recently in the wet so cannot really chime in. What pads are you using? I recollect a big difference between (forgot what brand) blue pads and the SwissStop.
In dry conditions they are ok, smidge worse compared to my Oxic or Kinlin rims but they are my only carbon rim brake set nowdays, so cannot really compare.

There are boatloads of old steel ATB stems on ebay, that is if the angle and length are anything you're after. You could get it coated in the frame color with all the other bits in silver.
I DIYed a stem, on old frame and spacers for the other half over summer, still need to get a headset for that build unfortunately.

For travel I have a small set of PB Swiss kit consisting of the PB1254, 8452 M, 451 M, the 470 bike tool, a 10-bit holder and topeak torque bits cover almost anything.
I used to carry a 6mm and 8mm T-handle for axles and pedals, but replaced it with a hex bit and works just fine with the 5mm allen from the bike tool.

I have a Bosch 06019H2101 which was gifted to me from our Bosch supplier. Have been using it frequently around the house for various tasks. More on bike parts since I discovered the max torque setting is 5NM.
I actually checked that value on our test-bench in the workshop here at work last summer and it reached 4.8NM, which in my opinion is quite good!

I was looking for the same couple years ago but have settled for a set of NItto B115 AA on my Vitus; 135mm drop and 95mm reach. See pic, don't mind the bad tape job.
I do have a set of Nitto M151 F in 40cm going spare as they do not thread through the DA7400 stem, more modern shape but 128mm drop and 78mm reach. (But I'm EU so maybe not that interesting.)

I'd take it but looks a size too small and actually just bought a CAAD 10 in the colorway like the video above for winter riding. If I show up with an other bike, I'd fear for the mood at home.

Yes, I specced the frame with guard mounts in the rear and have found an extra fork to play around with. The first idea was to bond stainless threaded standoffs and a flat head bolt to the fork. But will try the thru-axle idea first as it's much less work.
Bonding would be done with some "all round" 2k epoxy I still have in the drawer from some other projects.
A friend also suggested the QR trick, (it actually started with just a threaded rod and nuts) but you would need to faff around with spacers to fill in the area around the rod/axle to prevent rattling in the thru axle.

I have the usual Wald on my T1000 commuter, but not ideal as the shift padles hit the top of the basket and the handlebar actually needs to go lower. I was thinking of cutting the top off so in an ideal scenario the bag attachments to the rack would need to be kind of adjustable? Does that make sense?
I just use on old rolltop backpack whith about the same dimensions of the Wald for it. It holds anything from lunch, snacks, coffee thermos and a 1l Nalgene to the previous combined with a full set of clothes, workshoes and a laptop. Keys, phone and lock go into a stem bag.
I have been wanting a "do-it-all" bag for a long time, but I just don't know if it's feasable, use cases are all over the place. A 3-way rolltop tote with diagonal messenger strap and a possibilty to use it as backpack straps sounds ideal for my use case. (Added bonus would be suitcase trolley loops for airline travel) So you would be looking at a hybrid of all 3 designs. So you would need an internal padded divider for laptop and accessible pockets inside and out.
My partner would just need to stack some A4 binders, office supplies, water bottle, keys, phone and some other things women tend to carry. So it would just be a large compartment, maybe a divider and an inside pocket. Which would bring you back to design 1 with pocket on the inside.
So I get that it would be hard comming up with something for everyone. But like you said, a more expanded version of design 1 and a rack dimesion version of design 3 (with customisation options) would hit most use cases I think.
