Today I tried brewing Koppi coffee's Recent Kenyan Coffee "Gathaithi". It's one of the best kenyan coffees I've ever tasted, a huge peachy fruit bomb like coffee.
I brewed one aeropress at 15g dose/230g water and my usual method, with a few slight adjustments (I've been using the coffee for a while) and made a pretty nice cup.
I then brewed the same coffee but with v60, at 13.5g dose/230g water/95 degrees/2:30 brew time blah blah blah - made up the recipe on the spot, haven't made a v60 for a few months.
I was pretty surprised at how much more I preferred the v60, I knew I would, but the difference was pretty immense. It was so much cleaner and the flavours were more defined. The aeropress had a more "murky" flavour, with much less clarity, it was still very nice though.
Did some refractometry and they were both similar extractions, and the aeropress was obviously "stronger" (more coffee dissolved).
(note, have recently adjusted the water TDS so that's not the culprit, and the coffee was past optimal age, hence the experimentation)
I'm definitely going to keep preaching v60!

Hey guys sorry for late pics, had some internet troubles... virgin media is fucking useless.
The ring is slightly dirty, and by running fingers inside the teeth I can't feel any wear. It appears there is a small amount of wear to the outside of the teeth.

could you modify the top of the clamp somehow? It's hard to understand what the problem is, maybe some better pics?
I would probably have a go at it with a file.
On the other hand, frame modification should be pretty easy, all it would require is drilling a hole and cutting and slit for compression, then using a seatpost clamp. You could probably even touch up the paint with nail polish and be done!

just out of curiosity, what cadence are you aiming for when sprinting? if you are customising cassettes, why not have your top "gun it" gear 12t, or even 13t. the gear rations for 11t are just stupid, and nobody can spin them up.
typical track gear inches for sprint events are 92-94 GI and they sprint at 70km/h+
if you are a standard chainset 53t/11t is an enormous 126 inches. at 70km/h your cadence would only be 122, not exactly high when sprinting.
If you went to a low of 12 or 13t, your jumps would also be much smaller, thus easing your transitions.

What I meant by scientific approach is more a method for getting to nice coffee, not that there is one prevailing theory of good coffee. It's all about testing and continuing learning. I think a lot of people in the coffee industry have no idea how to do this.
I'll cool it and you're probably right, im just sick of putting in effort to be shot down by someone who orders an espresso/filter has says it doesn't taste like real coffee.
I'd really like if nice little communities like this forum could support quality and appreciation of progress, instead of being all "I just think it tastes better with 19g"
Sure there is subjective elements, but it's pretty well agreed that good coffee tastes better for known reasons, and you can't just say "I like over extracted coffee". If someone really only likes over extracted coffee, I'd argue there is probably less people who agree with this person then the likes of the people who run COE, or specialty coffee places.
It's kind of like how good wine is good, and if you subjectively don't like it, you're not really included in drinking it, and you shouldnt argue that you know which wine is better.
If I continue to post in here, I'll take it a lot easier as apparently people get offended pretty easily. Also, I'm fully 100% open to be proven wrong, but try your best and give strong evidence, so we can continue the scientific approach and appreciation of nice things.
