Blaster is basically a Composit with a small amount of padding. I believe 209 is a more heavily padded composit and doesn't feel much like a composit due to the padding.
Can't help regarding touring, I do all my rides on the Composit (albeit carbon railed version) as I prefer it over the Blaster which I tried for about 9 months on my commuter. Longest rides I've done are up to 140 miles.

Does anyone want to do some swaps? Your composit for my dynamic. Earlier in the year I was thinking of selling but needed more time on the composit to be sure - Now I'm definitely sure as I tried a dynamic again after a long time without and feels too narrow for me. Due to building more bikes I actually need a couple more composit saddles!
I have the following:
2x Carbon rail Dynamics in perfect condition with boxes.
1x Standard Dynamic well used but no scuffs or damage etc.
1x Standard Dynamic fairly beat up. -
I'm going to test this composit a bit more before I buy / sell. Have a chaingang ride tonight so that'll be a good test. The ride to work this morning felt really really good though. I find the dynamics don't give me enough perineum space so I can't fully bear my weight on it. I might be selling the following in the near future:
2x Carbon rail Dynamics in perfect condition with boxes.
1x Standard Dynamic well used but no scuffs or damage etc.
1x Standard Dynamic fairly beat up. -

I've not compared my Dynamic saddles (carbon vs steel rail) on the same bike but I did compare the Romin Evo Pro (carbon rail and firmer material) vs the Romin Evo Expert (hollow Ti rails with gel padding) on the same bike and found the carbon rail saddle a lot more comfortable overall but that is probably partly that I prefer less padding.
I think it is good to have carbon somewhere in your bike, whether it seatpost, saddle rails or frame as it should reduce certain vibration frequencies. Although I've yet to ride a carbon frame.

I've got 4 Dynamic saddles, 2 carbon rail and 2 steel. They are the best saddle I've used by far. The distant second best is a Specialized Romin Evo 155. Even with the cutout in the Romin Evo saddle I'd end up with pain for up to a day later after a race due to the pressure on my perineum, no issue on the Dynamic saddles. I've not tried any other SMP saddle, although I do have a Composit that I got cheap, but haven't tried it due to the narrowness but it could work.
I find around -2 to -3° (nose down) to be what works for me.
@apc
You may need to move the saddle forward. When switching saddles I compared the saddle shoulders which resulted in it being nose forward of my Romin saddle but in the end I needed to move it a bit further forward again so I wasn't bearing too much of my weight on the narrower part of the saddle (towards the front). For me I think this is due to needing to sit further back on the Dynamic saddle to support my sit bones compared with the wider Romin Evo 155. -
Having done a decent amount of miles on the Lake CX145 wide shoes in variable conditions I can say they are great in the rain. I first I thought they were terrible but what was happening was the rain was hitting / soaking through my bib tights which were inside the boots and the inside material is a bit like a sponge and soaks it all up, actually had puddles in my shoes. When I pulled the bib tights to the outside of the boot I've only had slightly wet ankles in really heavy rain on a 13 mile commute. If I had some kind of waterproof trouser / tight I guess I wouldn't get wet at all.
In the cold (0° to -7°) my toes still get cold in long rides but I'm only wearing thin socks so the shoes aren't tight (really really wide feet). Before they'd get cold and numb in more typical cycling shoes with a toe cover. I've always had terrible circulation in my feet though so this is pretty good for me. I could probably wear thicker socks but I don't have any thicker socks that don't come above the boot line (so would absorb the rain).
I'm interested in the 9100 170mm cranks if you are selling separately. Thanks
