Very very delayed update on this (inspired by seeing a Gallium Pro in another thread).
The local painter was very helpful - we did a couple of tests that didn't really work as I had pictured. We decided to go for the Didspade Kosmos Supershift Flake in the end with gold decals. I'm pretty happy for the price I paid, although I don't think it has turned out quite as nice as Kustom Flow's example - my assumption is issues with the quantities of flake mixed and the size of the tip on the spray gun. The effect is more subtle, with fewer large flakes.
The main thing is that I've added a new lease of life to the best bike I've ever owned.

What are you using?
I have Pirelli Cinturo 700x45 and they supposedly have a decent rolling speed but are outrageously heavy (over 600g) each. I know weight shouldn't matter so much, but I can really feel the difference compared to Gravelking SK 700x38, which were around 400g IIRC. I'm also taking the bike on planes a reasonable amount, and always right on the edge of weight limit, so even a few hundred grams reduction here and there helps.
I'm also realising more and more that I simply don't need such big tyres 90% of the time as usually on road or dry hardpack). Tempted to do a gravel tyre multi-criteria decision analysis thing.

Picked up some new Challenge Strada 700x40 tyres the other day...
I've been contemplating getting a pair of these. Seem fast, but I've read some negative things about durability/puncture resistance, and as you say, ease of fitting. The guy at bicyclerollingresistance seems to think they have decent puncture protection though, so a little confused!
I'm mostly riding hardpack/light gravel, which is bone dry 99.9% of the time, so don't really need much tread and durability probably not such a major concern anyway. Want something that will also roll fast on tarmac as well.
