I am back home so I had the chance to investigate further.
Cassette spacing:
Was not easy to confirm with calliper but I am quite sure that spacing is consistent as the calliper fits snugly in-between all the rings.Before rebuilding or acquiring new ergos I wanted to establish that they are the cause of the problem. I have noted the following which may be useful for confirming that the ergos are the problem:
1) When shifting up there are times when the dérailleur shifts into gear but does not stay there (it shift back down).
2) To shift up from the smallest ring I either need to overshift or to overtension the cable (hence messing up the rest of the gears).
3) When I pull the naked cable the shifters clicks and dérailleur shifts down.Any feedback appreciated.
Also if anyone has a spare set of ergos pls let me know. I will also post in classifieds/wanted. Could be interested in 9 and 10 gear as well as I am also considering upgrading my wheels!

I did hope it wouldn't come to that (ergo rebuilding) but it probably makes sense.
When I start from the smallest ring I need to overshift by quite a bit to get the derailleur to stay in second gear or to over tension the cable which messes up the rest of the gears!
Are there any tests I could run to confirm this theory??

From your feedback I take it that the shifter/derailleur combination could work so I will start my investigation elsewhere! !
The cassette came with the wheels and it was already installed.
I bought the wheels as a mavic/Athena 8 speed wheelset and asked the seller to add a campy 8 speed cassette.
I don't think its the chain as it was a new chain installed by my lbs when I completed the built.

I did try a few times to re tune (my lbs also had a go) but no luck!Could an over-tighten lockring on the cassette mess up its spacing??
Other causes I am considering:
- messed up cassette (other spacing or sprockets)
- messed up free wheel
- bent derailleur
- bent frame/ cable hunger
- messed up ergo shifter
- messed up cassette (other spacing or sprockets)

Greetings to the group!
Tuning my rear dérailleur has proven impossible.
Some gears not shifting at all and some gears shifting two at a time.I don't know where to start. I am wondering whether its my ergos/ rear derailleur combination??
I am using these exact Campy record ergos:

with an Athena 1st generation 8 speed rear dérailleur that came with a friction shifting group:

Is it because I am using the older friction shifting derailleur or should I be looking elsewhere??

I am looking for spacers which will allow me to use a modern wheelset with my 8 speed Campy Athena group.
The "wheels manufacturing" kit is what is currently available in stores.
I am aware that other products existed in the past that did exactly the same thing!
Any such product would do!

Thanks to everyone for the feedback.
Based on your feedback (and some further research) I have realised that the Zondas or in fact any wheel with less than 32 spokes will not last with my weight.
Also I am not very keen to rebuild the Athena hubs for a number of reasons (no good wheel builders where I leave, I want to shed of some weight, would like some modern bearings etc).
I have found these Hope3/ Open Pro combination:
They retail for €380 which is not cheap, but could turn out to be a good investment.
They are laced with Sapim Sprint spokes and weight 1.700kg (excl quick release).
Any experiences with the above set?????
An alternative would be to go for a DT Swiss combo (say 350 hubs/ R450 or RR465)

Bikes24 has the Zondas for €320 (£280) which I think is very fair. They also have the Miche Primato Campy 9 Speed cassette for €25. Rebuilding the current hubs will probably cost me in the €200 region.
Skully I agree that the Campy Omega V would be a nice option for rebuilding.

Upgrading the Fidusa
I have recently acquired a 90s Columbus SLX frame from the Greek brand Fidusa.
I have built the frame with an early 90s Campy Athena 8 Groupset/ Cinelli stem/ 3ttt drops.
Saddle is Fizik/seatpost is Planet-x (the Campy Aero was to short).Wheels are Athena 8 hubs (36 spokes) laced to Mavic 192h rims see below for velobase entry:

I am not sure what the spokes are but they are nothing special.The whole built weighs 11kg
I use it as my main road bike so function is quite important.
I am 190cm tall and 110kgs heavy!I want to upgrade the wheels.
I am looking for somehthing both stiffer and lighter.I am considering the following two options:
1) Re lace the athena hubs with some strong spokes to H plus & Son Grey Archetypes.
Pros:
I thinks they will look fantastic on the build.
The wheels will be strong
Will be period correct to a certain extentCons:
I am not sheding to much weight off
The front Athena Hub is not that smoth.2) Get a pair of Campy Zondas 2013 wheels.Use them with a 9 speed cassette (drop 1 ring and re space with a spacing kit).
Pros:
I will lose much more weight (close to a kilo)
I will be getting smother hubs
Less flex (I assume)Cons:
I am not to sure about the looks on the steel frame (I will remove all the decals).
Solutions will cost more but I am willing to invest.Any feedback welcome.
