Uk 12. Eu 46 (usually 47 but hey who knows). I am a 12 in everything and they fit. Bought as spare pair so virtually no use.

4700 pull ratio as 11 5800, 6800, 7000, 8000 and Dura Ace 11.
Running 11 speed with 4700 mechs is fine, done it lots. (same goes for GRX 400 mechs and chainset, my gravel has these with Ultegra 11 levers and cassette).
If ones back wheel can take an 11 speed cassette (most today) then a simple cassette, chain and r/h lever gives you it all. Also 11 speed chain makes 10 speed Tiagra much nicer and they are cheaper.

I did one in lathe myself ages ago. Dura Ace 10sp hub didn't really play ball due to straight pull bits, other hubs did. The 11 34 as above works. I used last three and made up a closer ratio cassette with other bits. Bit of a jump up but the 34 makes a 39 front very usable

Or something older/ I have two Bob Jacksons. One Olyimpus 2012 and one Vulcan 2019. The Olyimpus has Columbus Minimal forks. Both take 30mm GP5000 on 17mm Cero wheels with Potenza Brakes. Not all old stuff is tight.
