Late to respond but differential movement is not subsidence. Out last place had an extension built on shallower foundations which were then effected by changing ground conditions (clay soil) and consequently moved causing cracking.

Henry still the builder's choice as they'll pick up anything and are super robust.

Home buyers surveys are useless, generic, arse covering rubbish. Don't waste your money. Get a full survey instead. Speaking as a chartered surveyor who has reviewed plenty of each.

Bay foundations to Victorian buildings are often minimal when compared to the rest of the building. Worst case scenario you undermine your foundations and require major structural work. I wouldn't touch that area tbh.

Check stack and reach etc. Plus the stem angle website is very useful.

You are taking a position from a relaxed endurance bike to an aggressive race bike though...

Always worth increasing cadence, as you can move between taxing your muscular and endurance systems. It's also very good to be able to kick with slow or high cadence particularly for racing but also if you're just put with mates.

A full building survey by a chartered surveyor should cover that. Obviously there will be always be some caveats as you can't undertake intrusive work. A homebuyers report is an exercise in arse covering tailored to suit the form of construction/property period. (I'm a chartered BS)
