I'm using hydro brakes which are less fussy about the hoses being straight - running it under the top tube.
The gear cable is fine too, it's just the inner, which goes in between the middle and side bit of the shotgun seat. Will depend on your setup a bit. Anything that needs to go down the middle of the top of the top tube won't work, and full outer cables probably won't either.

Depends on the bb width and the rear hub chainline, but usually the inside ring on road cranks has a chainline close enough to standard track chainline to not be a problem (41mm vs 42mm IIRC).
You'd just need narrower chainring bolts and a chainring/chain width the same or bigger than what's on the back.
7400 is a really nice crankset, would be completely fine for a commuter/beater.

I think the sweet spot is long top tube, long flipped stem, seat as far forwards as possible, with swept bars (eg One One Mollymawk) and Spirgrips or similar for them to hold.
Basically make them sit as far forward and as tukt as possible without them hitting their legs on the bars. While you are as upright and sitting as far back as possible.
Also keep their feet nowhere near the front wheel obvs.(Need to trim mudguard stays)

It's such a crazy state of affairs... squeeze out/shut down the LBSs and smaller retailers by selling stuff at prices they can't compete with -> lose tens of millions of pounds -> go into administration.
Obviously that's a simplification and there are other factors at play, but it's such a sad indictment of this type of business model.
