Garden secateurs or snips from any diy shop will go through any cable in about .5 seconds.
Take it with you if you don't want to loose it or magnetic bb's in all the allen heads.

Magnetic bb's in the allen heads sounds like either complete genius or scoldingly simple to remove, have you ever tried this and how powerful a magnet does one require to remove 'em when needed? Ta.

I headed over this afternoon to pick up some brakes - thanks Jake(?) for making a Newb' feel welcome. Maybe you could do with a small sign by the road entrance? I road straight past it on the way up and I'm sure the karate school (or whatever it is) wouldn't begrudge you a small notice?
The guys were very helpful and pleasant indeed, I can't recommend this place enough.

Having just seen this bike too, I concur with Dyleet - beeeeautiful. Unfortunately it's not for me so still available. A big BUMP for such a lovely bike and for tbcdurley for his time and allowing me to take a look.
