Have you allowed for tubeless sealant in your 550g for tyres? That'll add 50-75g if you haven't.
Easy 50g to be saved with a UNO stem... knockoffs can be had for cheap too.
Getting 2/cages down to 20 odd grams is easy as said above with the XXX light knockoffs.
130g Hylix seatpost (use at your own risk).
Plenty of non-boutique saddles at around 100g - stripped carbon SLR for example will be 110 or 115g (they fit me, but YMMV).Could easily knock a big chunk more off on wheels, but $$$

FWIW, the specialized balance bikes have a little shelf thing where the little'uns can put there feet which helps when they go over rough stuff.
That's really cool for learning to do jumps, up / down curbs etc.We got our daughter a Giant Pre, which is more or less the same as the one you got, but I think the specialized ones are probably better (albeit much heavier - made of steel, not aluminum).

the different pull ratio thing is a have - Shimano just love to sell people unneeded components...
Think about the huge number of companies that have proprietary brakes (Giant have their 'Aero' bikes released with TRP brakes, Bontrager bits on Treks, various weenie component makers etc.) which are used with shimano brake levers from whichever generation, AND Campagnolo / SRAM etc. too.
Just stick the best quality silver brakes on that you can find, with the best brake pads that you can find. It'll work wonderfully!
