Personally I would swap out the bmx style levers (if that's what you're running at the moment) for proper hoods. Even if it's only one connected to the brake, it'll be symmetrical and way more comfortable. Your brain will quickly learn which hand activates the brake. Have you specced just front brake for the new build or front and rear?

Genesis CdF seem to be out of stock until 2022 in most places. If you're not averse to building a bike up I'd go with @Fforiwr 's suggestion of a Spa Cycles Elan (though you might have to look high and low for some parts).

If money was no object I'd go for the Ritchey.
The Sutra will be a bit more familiar to you as a MTBer I reckon. Designed for proper 'expeditions'.
Have you looked at the Kona Rove? It's a bit in between the two - carbon fork, slightly less relaxed geo but still a bunch of mounts and clearance for big tyres.
As Belagerent points out it's also incredibly hard to get anything at the moment...

Haha, it's not what it looks like I promise officer.
They're one of the best pizza places in Amsterdam and rather do disappointing, soggy delivery pizzas throughout lockdown, they spent a couple of months working out how to cook a pizza just enough so that they could then freeze it for finishing at home (not my photo).

The sight of that fork made me quite literally laugh out loud on an otherwise pretty glum Tuesday morning, so I thank you for that.
This looks like the bike equivalent of the person you see at a music festival, dancing on their own at the back of the crowd, eyes closed, big grin, really feeling the music. Outwardly all the normies give this individual a wide berth, but inside you know they're thinking they wish they were that free to break free from society's norms.

Kona Rove Ltd is a fairly similar set-up but definitely looks more normal.
Maybe it's the lighting used in the Vitus shot? Makes it look very 'flat'.
