@bigfella - You can change most 8sp levers to 9sp by replacing the rachet mechanism and springs inside. Give Mercian Cycles a call. They sell parts for ergo levers and they've been very helpful to me when I called them a while back when I refurbished my old 9sp levers. It's a fiddly job but you can do it yourself. And you can download the schematic from the Campag web site in case you get the lever apart and can't remember which order the parts go back together! ;-)

I'm no expert on touring so I can't offer a bike or advice I'm afraid but I know there are a few on this forum who are into touring and with a bit of luck they'll be along to offer some advice. If you haven't done already, it would be worth giving the CTC forum a try. Loads of people there are into touring. This site also looks very useful, especially if you're fairly new to touring, like me, and lots of good ideas for inspiration. Good luck.

I found an old square-taper Campag left crank in my box of old miscellaneous bike bits but I don't remember which model it is. If I had to take a guess I'd say it was Veloce but it might be Chrous. There's no printing left on the crank, if there ever was any, but has "284" stamped on the inside of the crank but I doubt that helps to identify it. I'm asking because I might be able to make use of it again if I can find out which model it is and so get the right BB. It's likely to be from around 2002-03. So does anybody know how to tell which model it is?
I can post photos if that would help. Let me know if there's anything in particular I should focus on.

The same thing has happened to me a couple of times on Open Pro rims.
What arup said. Tape the new rim to the existing wheel, line up the valve holes obviously, then move spokes over one at a time. Take your time and don't over-tighten. Personally I'd replace the spokes unless they're fairly new or you're on a tight budget.

The cleats aren't quite the same. If I could find my old Look pedals I'd try to clip my shoes (with SPD-SL cleats) into them to be sure but from what I've read they're not compatible. And to add to the confusion, the newer Keo type cleats are different to the old Look cleats.
