Ha! That's exactly what I used to do for a living. I was an F1 Materials Engineer. Did it for over 14 years. Until two weeks ago.
The engineering and materials science involved is interesting but it's not rocket science...
I'm done with F1 and the silly hours and the lack of home life.Now I make spacecraft and work a 37 hour flexi-time week. Bliss!

On the Lansky system. I bought one of these and tried it. Granted, you can get your knives fairly sharpish with it but I find it an incredibly unsatisfying, fiddly faff to use which just isn't pleasant. It's quite difficult to get it to grip/hold the knife blade soundly enough which can give rise to inconsistencies in the grind angle. Also, due to it's design you can't get super fine angles on the edge of a small blade (like an Opinel pocket knife) as the clamps clash with the stones.
I much prefer standard honing and whetstones which do take practice but they are so much more satisfying to use, you feel much more in touch with work.
Anyway, just my 2 cents. -

Been looking for a decent pocket knife for a while now. After a few unsatisfactory purchases and some considerable research later I finally opted for a Spyderco Paramilitary 2 and it is outstanding!
Easy, quick, one-handed opening (a primary requirement), light in weight, excellent ergonomics and comfort and a blade made with superior Crucible Powder Metallurgy S30V steel that came hair-shaving sharp out the box and maintains incredible edge retention. So satisfying to use. I cannot fault this knife.
It came with a pocket clip that can be set at any of 4 positions but I removed it to make it even lighter, slimmer and more comfortable in the pocket and in use.Pictured here next to a ('shit') INOX Opinel No.8 for size reference.
