https://www.bbc.co.uk/food/recipes/caribbean_jerk_chicken_18860Last time I did it with a Watermelon and Feta salad which was epic (James Cochran did some recipes which included jerk chicken but I wasn't convinced that his recipe was better than the above, though I didn't try it). I like the shiny glaze on the bbc one but I use less bbq sauce and opt for some additional rum, soy and lime.
The marinade time is key I find and I slash the skin so the marinade can all the way through

Never had an issue with motor stalling and I've use pretty light roast beans for espresso. Assuming you've recalibrated it? Does it work fine when grinding darker roasts?
Niche are pretty responsive so I would shoot them an email from a cursory glance on reddit theres a few folks who have had to replace the motor to solve similar issues.
