What sort of pressure are you running them at and in what way was it hard? The tyres look like they would be OK for dry trails but might lack bite in the gloopy stuff. Lowering the pressure for off road can make a world of difference to the feel.
As for the post perhaps think about shortening the stem if the reach feels long. You need to keep weight back a bit for grip and it helps keep the front end light for lifting. Even just rotating the bars back can make a hell of a difference and would cost you nothing to try.

If things get really desperate I might be able to help short term for a few nights but the landlord here would not be cool with night work and sleeping in the day is impossible round here due to the workshop downstairs. It would be down to him but he's a good sort for helping in emergencies.
I might well be looking to move on myself soon if he's considering getting a new house going. It's not been the same vibe following the trouble earlier in the year :-(

Even then it would be more likely to have gone into the back of her thigh than the front as the video shows. What's also puzzling is the apparent lack of any bruising around the entry wound. I'd have expected to see some marking from the bars.
As for the brake debate - I ride F&R when fixed. Went to front only and had a crash when my worn SPD cleat unclipped whilst pulling a skid stop, grabbed the front brake and went over the bars resulting in a broken scaphoid. Since then I'll only ride with two brakes. It may not be cool, but then I never was to begin with.
