As a starting point I'd recommend 16g coffee, 240ml filter water at 90deg, pour all water in, stir well, seal top, leave for 1 min, stir again and press over 30 secs. Stop as soon as you hear the hiss.
Edit: Just realised you're talking about espresso-style coffee, I've never tried that in the AP. The above is for filter-style which is where the AP shines.

At any rate, my question: does anybody know where seals*/tampers**/etc for such old machines can be purchased over here in the europes? Is there an eu version of http://www.orphanespresso.com/ ?

What grammage and grind are you using? I love pourover. nom nom.
This wasn't for me but...
I don't stray too far from 15g/250ml, adjusting from there according to taste and time (between 2:30 and 3:00). Also I'm a stirrer; I don't think you can get an even extraction without stirring the grounds at some point.
Increasingly convinced that the Porlex creates very uneven grounds, full of fines that make all my coffee taste bitter, compared to a shop using a good grinder (albeit with better water). Hence my questioning the MC2. -

Ah that's really cool, looking forward to seeing that place! Will coffee shots be on the menu or are you just using the EK43 for espresso?
