Unfortunately UK public charging isn't cheaper than petrol anymore.
I'd go with an efficient ICE and save for some sort of home solar/charging setup for a future EV.
Or, if you're really keen I'd look at the Skoda Enyaq IV 60/80, VW ID 4, or Hyundai Ioniq 5 at ~30k miles (ideally for~£22k) and sell at 60/70k miles for the most favourable devaluation (currently ~£20k, but probably ~£15k in 2-3 years time).

Buying an efficient ~60mpg ICE vehicle makes more sense than buying a PHEV in my opinion.
EV plus solar at home is the ideal as it has the cheapest maintenance/service costs, less environmental impact and the free 'fuel' offsets the cost of ownership.
How about an ex-lease EV (~30,000 miles) with a plan to sell it on again at 60,000 miles? Battery capacity would be ~99%. What's your budget?

The higher the better, but in reality this is all you need for ply, or mdf (40T, or 'fine cross cut'):

Typically people like to have a view from the sink, but perhaps that's a little 'old school' now due to dishwashers, etc.
I'd be keen to reduce the visual impact/importance of the extractor fan, if possible?
Fridge to sink journey feels a little high-effort currently? Where's your main prep area going to be?

Flow rate and pressure are different things.
Assuming bad flow rate: this requires a wider aperture, I doubt your taps would have a wider aperture than the tails used to attach them, but there's a slim chance. Your tap might have come with a manual showing the diameter at the base of the tap, is it equivalent to the tail diameter, etc? Also: Did your plumber fit new isolating valves? If so, were they full-bore ones?
Assuming bad pressure: you can increase pressure with improved plumbing to the taps: less friction, shorter run, wider supply to key taps, etc.
