One thing I have noticed is that my shoulder stiffens. I think this is partly the bags I use - I have loosened the shoulder straps, and used the waist band more. I also try to relax more when riding.
The main problem is, I think, that I am constantly turning my head round to look over my shoulder to see what's behind me. Not something I can really avoid, but I know that this hasn't helped my shoulder stiffness.

I was given an old pug frame, which I converted relatively cheaply (although more expensive than I thought beforehand!)as a first go. It is a lovely beater/commuter...
I am now working on a second build - taking my time, waiting for the right parts to come up, thinking about what I want it to be, spending the right amount of money...
Basically, what I am saying IMHO is get stuck into your first build. Have some fun with it... I would then settle back and work out exactly what you want for your 'premier ride'.

My beater is a Pug convert.
The most important thing is that you have a seatpost that fits. After that it is all gravy.
I used an on-one rear hub (36H)... very cheap, but holding up well. Unless the rim is in good nick, I would just get another one. 28h will be tricky to get hold of IMHO, although SJS may have something.
I did my first wheel build in exactly the same circumstances. Good to have done, but the wheel was never perfect. Not sure if it was worth the effort...

hippy Ooh a conundrum.. bidding war!
Nah, I have to give it to dogsballs ro-land, sorry. He spotted it in the first place and got in when it was offered properly and he supplied the bits for it which he now gets back again. You can buy it off him when he's pimped it :)
Yay.. more space.. oh.. more space for another bike..
Cool! Only teasin' really ;-)
What is the plan for it, Dogs?
HG Wells was the first person to use the phrase "atomic bomb".
