Nah, tried it both ways works best the 'wrong way round'. Cable end fits snug, and the cable doesn't move when you brake.

Yeah, shimano MT20s use leather. Can def recommend the Decathlon shoes. Got a pair of Sport 400s for £20, nice fit, SPD, Stiff sole, but can walk in them, & totally vegan. I believe all their cycling shoes are vegan. They do some more 'casual' type shoes (Not SPD) and I think some MTB ones.

Rapha softshell, got one cheap (relatively) a couple of years ago. Great with a thermal vest underneath. I tend to just let the bottom half get wet. Never tried sealskinz socks. When I was a courier I got these flouro green (it was fashionable then!) Jolly boots. They were made of Goretex, totally waterproof... the water used to run down your legs and fill them up. I used to have to take them off an tip it out before I went in to pick up.

Some lightweight steel tubing goes as thin as 0.4mm, so you can easily damage a decent frame. You can get a framebuilder to remove them. They just heat them up til the braze softens.

I would definately add a headset press and cup remover, plus the eqivalent for crown races. I spent too many years bodging headsets.
