I think that's exactly what I got, despite discussing with the butcher what I wanted, and sending them a link to Turner & George's brisket point page!
The butcher is otherwise great. When I wanted to do pulled pork, he got half a pig out the fridge and asked where I wanted it cut, so I got exactly what I needed. For brisket, as you say, their default is the flat and rolled Sunday lunch type.

I got the Signals/Billows set up over the weekend. The hole in the Weber took a £30 Screwfix drill bit but it all went smoothly. The Thermoworks 1.18" adapter for the Billows fits nicely in the BBQ Guru universal adapter, a bit of info that I couldn't find for certain before I purchased. It held a 225 +/- 10 all day, through snow and sunshine.
My brisket from the local butcher wasn't quite what I expected, much wider and flatter, but it came out nice, and I finished the thin end in a maple syrup, butter, and sugar glaze.

That's my thinking. I really like the results I get from the long cooks, but I only managed a couple last year due to time constraints, and we have a baby now, so I have even less time! I'm hoping with a set up like this I can start it off early in the morning and pretty much leave it until dinner, with the alerts etc if something goes wrong.
I also keep thinking, when I see the price, that it's half way toward a KamodoJoe or something, but then I'd probably want this set up on that kind of bbq too!

Yeah that's the reason - the hole has to be higher than the ash/vent blades, so ends up only just below the charcoal grate. From there it would be blowing at the flat face of my slow n sear, rather than getting underneath and to the coals.
Great find there anyway, I wasn't sure what to Google, but that definitely looks like something I could adapt. Thanks.

Probably just one big thing at a time, so no issue with 4 probes. It's to go on a Weber kettle, so there isn't loads of room for multiple items.
One thing I noticed with BBQ Guru and FireBoard is they sell a shaped piece to aim the air downward. I can't see anything similar from Thermoworks, so I'm trying to work out if I need/could make something to suit.
Already got the Thermapen, although it lives in the kitchen where it's used every day. Super handy!

That looks okay to me. I have Shimano dynamos on both my bikes, the dynamo end normally has a connector for bare wires, so a cable like https://www.sjscycles.co.uk/dynamos/dynamo-wire-double-core-black-with-standard-push-on-connector-21-metres-long/ that had spades on one end to connect to the light should be all you need.

I've used an IQ-X for countryside commuting for two winters now and really like it. I've only had lesser B&M models before, so no direct comparisons, but it doesn't leave me wanting for more, and it's not given me any issues. The light doesn't seem crazily bright, but when riding it seems to put the right amount of light where you need it.

I think at almost 50cm wide it's too big for a dutch type crate, and for anything bigger I have about 20cm overhang either side of the rear rack, which puts quite a lot of leverage on any fixings.
I think I might go for a Minoura Gamoh, as it looks like it should almost fully support the printer, and I can still use the rear rack pannier for my laptop etc then.

Hmm now I need a minivelo with cargo platforms!

Has anyone tried to carry a printer by bike? Once a month I do a project within the village I live where I need to take a printer. So far I've been taking the car, but I'd rather not.
I'm thinking a porteur rack is probably the best. My rear rack plus side basil basket didn't give a stable enough platform.

I've actually spiralled it around the hose now, and have cable tied it to the hose at the mount points and to the frame in a few places, mainly thinking of keeping any stresses off the cable. Fingers crossed hose maintenance doesn't come up too often, it was a faff getting the discs set up!
On my attempt to increase hydration (60 -> 63%, 24hr proof) I felt it got more sticky than the previous recipe, and I needed more flour on the peel. Was what I make not developed enough? If so, what does developed refer to?
