Did you give the sealant a good shake before adding it? Sometimes if its been on the shelf for a while then heavier more active part can sink to bottom of the bottle and then only the lighter runnier sealant goes in the tyre, but this can usually be seen as it can spray out a bit more, but sounds like you cant see/feel any sealant around the pin holes?
If the tyre is old, is the bead still ok on it? Might be escaping from the bead when riding, and doesnt when bike is stationary?

Wow, that looks quite a largish 3 in 1 set, looks great.
I spent the morning with nephew making a start on lego city car wash, he's only 4 so didn't make it past bag 1 but first time I've worked on a set with someone so young, really enjoyable.
They've opened an amazon returns shop close to us and they often have opened or damaged box etc sets in there. Picked up one of the starwars helmets for about half price.
Think they might be taking more of my wages during the winter months this year.

Hybrid model, home/office, or full time in the office should this be preferable.
