I would say there is a lot of competition in that area but i like the idea of showing races, most places in SE are a bit half arsed with that side of it. That said its because maybe there isn't a demand, just because i want to watch pro cycling for hours pumped on coffee doesn't mean anyone else does. If you are focusing on the food and drink turnover is key, thats why most places like this tend to have quick eats that take little preparation.
Post ride can be a bit of a funny one sometimes people just want to have a coffee and a chat. Other groups will hit the beers and seek a bit of atmosphere.
I would try and be as engaging and approachable as possible, organise events (ride outs, film nights, talks etc) as much as possible.
