Cheers for the comments all! It's a great bike that's changed over time and seen a lot of miles. I ran it for a few years on 700c x 28mm with a rear rack. But only ever using one pannier to commute, I decided to equalise the load and stick it on the front after having experience of a bar bag on my other bike.
@jambon as mentioned in your thread, I'd happily go for the new Tiagra 4700 when I need to replace them. Purposely chose 10speed for the slightly wider chain and hopefully a bit more longevity than 11sp.
@hamrack it was a bit of a gamble on the 32t with the short cage mech, but it works fine. The 10t jockeys obviously give you a little more clearance to run the 32t cassette. The Sunrace purposely chosen as I think the only 12-32 ratio - I didn't want the 11t high gear, but wanted an emergency gear when lugging a load of stuff.
It crosses chain fine, but I avoid crossing the chain in to the largest 3 sprockets (but it will do it). -
They are solid enough, so solid that the stainless bolts seize in the oxidising aluminium stays from experience - not that it's too much of an issue as you never normally need to take the stays off the guard, but I was concerned of long term durability at that interface though, but mine were still sound after 2+ years of year round commuting.
Although aesthetic is subjective I think the Honjo/VO style is far nicer where the stays fix to the guard.
Also plastic 'p' clips in the Gilles Berthoud are not as nice as the metal ones in the Honjo/VO...
All my opinion of course though.
I have got both GB and VO on 2 bikes... I almost put the VO hardware on my current Gilles Berthoud guards on the daily bike, but decided the additional cost not worth it (have actually used the metal VO p clips at the mudguard eyelets though as I had them spare). -

I bought the bike/frame ages ago. It's Reynolds 931, very similar to a Croix De Fer, but tighter clearances and a slack head angle. Surly Straggler 700c Fork.
Stans Arch Rims, Alpkit Juice Front, XT Rear.
105 5700 Shifters, 6700 Short Cage Rear with 10t Jockeys, 12-32 Sunrace Cassette, 46/34 TA Rings, Shimano Generic Cranks, Speedplay Frogs.
Surly 24 Pack
Gilles Berthoud 26" 50mm Guards.
Compass Babyshoe Pass
SV14A inner tubes.
Son Edelux Front, B&M Rear Lamp.
Thomson finishing kit. King Headset.
Generic bars and a Regal Seat.
Think thats about it.Need to speak to Big X Top for a custom bag, or an ILE Porteur.

Coming on well!
You'll be fine with 5700 and the Trp.
I've been through about half a dozen sets of pads on mine, front brake is absolutely rock solid on the cable pull, rear nominally more sponge due to the cable length, but I wouldn't change anything.
Jagwire Road Pro XL cable set (as I've just commented on another thread).
I'd also go for Eds recommendation if you can find the Yokozuna stuff at a reasonable price. A full jagwire set as I've mentioned can often be had for sub £30...
