haha i understand your pain jamesrider as i went through this shit when i put a thread out a few days ago, most people dont read the initial post properly or miss entirely the point, and spout of at you for the wrong reason.
if your asking on the video in terms of the way its put together well i think it needs a steadier position and more suited music, and maybe shot with smoother riders to make it more watchable and a point

I make ice-cream with liquid nitrogen.
After posting the above, I remembered that some of the guys at work were pissing about today. They made a scallop dish. Pan-fried scallops on a bed of smoked beetroot puree with an apple and lavender jelly. It was very good. Horseradish Snow, my arse!
no joke i just did a quick google search and saw it takes out the need for a churner. very cool. whats it in terms of texture compared to churned ice cream
your looking to deep into whats not important, just think of it as scallops with horse flavour and a cool temperature, forget the word snow.
anyhow where are you working?
