@Chopsicle not sure if you can help with this....
Is the women's Zoa much different in fit to the men's? Just noticed there are still a few discounted women's Zoa items, which I'm tempted to try.

I'm researching this topic too. General consensus from friends I've spoken with is that the integrated hob/downdraft is good, although noisy. I'm now trying to figure out if I can fit a built under oven below one.
The other option is to have a retractable downdraft hood behind the hob, From what I've read these are slightly more effective than a downdraft hob but additional complexity with install, also more cost and space used.

Yeah big steels, we are the ground floor of a 5 story building. 11 party structure agreements. huge temporary works/foundations. Its been painful and slow. On the home stretch now, just the simple task of refurbishing all the internals. :)
I think we'll get someone to spray it on. The finish is apparently much better. Spraying intumescent is a specialist trade, probably for a reason.

Inbuilt temp sensor - is that a probe thing for cooking meat?
On previous kitchen appliances I have just visited the Hotpoint outlet and bought whichever had the most discount or FB Marketplace. This time trying to explore options and make 'the right' decision.
I quite like the idea of having a separate grill instead of having the main oven door open. The Smeg DUSF6300X has reasonable sized main oven and separate grill. As you said it can be bought for half priced as a graded item.
