Julia Childs French cooking although american is the most instructive I have used on french food. I also think the CIA bookbook, which is the culinary institute of America not the central intelligence agency, so its just boring old food and not radiation infested treats that a Russian KBG agent cannot resist, is also excellent as being highly comprehensive and encyclopedic.
