    That's a lovely frame. It's not a 'regular' 731 OS though, but a 731 OS R.V.S. (Roest Vrij Staal = Stainless Steel, referring to the Noblex stays) later also known as a Gazelle Exception.

    It is a late '70s timetrial frame. Columbus tubing, special forkcrown, circular fork stays, drilled out at the bottombracket. You can look it up in the 1978 and 1979 catalogue. Still, this one is repainted, the type of BB housing seems to differ from the ones in the catalogue and the cablestops on the top tube are probably a later addition. All in all, it seems expensive for what it is, but it is probably quite rare.

    Gazelle DeMax, slooping steel frame, Reynolds 531 trapezi half lugged /half welded tubes. I think they're around the 1999 brochures. I've got a blue one myself.

    Used for races also as a daily ride with road tyres.

    Lovely cyclocross, the modern equipment looks surprisingly 'right'. I've got a similar colourscheme cx with more vintage equipment, nice to see one built up like this.

    Looks amazing.

    I´d try to get nylon straps and bartape in the Brussels blue of the seat tube´manchet´.
    Silvery grey/white, slightly translucent outers (the old stock shimano slr would work well), and ideally a (pale) blue suede Concor Profile and the grey blue ax hoods (easier said than done).

    But it is an incredible looking machine as it is already, extremely well done.

    Try http://parcel.nl/, I think they are a sort of intermediary buying shipping space from regular couriers. They were very helpful when I sent a frame (also from Rotterdam) to the UK last year and answered any questions I had quickly. Transport went through without a hitch. Lovely bike by the way.

    In my opinion a San Marco Concor version would be the nicest saddle, with the most fitting one the Profil aero variant. But that might be tricky to get on short notice, a regular Concor would be quite easy to get though.

    Toeclips and sometimes straps can be gotten easily enough if you have time and visit jumbles, but if you need them quickly Mario at defietsenmaker.nl would be your best bet, but I guess you know that already. He also has the levers with fresh hoods, but they're not cheap I'm afraid. Still, you can stock up on AX goods and ship them in one batch I guess.

    I was lucky enough to get some original EX/AX headset (and pedal) tools a while ago, but if I recall there were quite a few newly made ones available on eBay.

    The hoods are the really hard thing to get in decent condition. Good luck, love this build!
