Define: better... ;-)
Well, your original parts are probably classier and classickerer than the second option, but old-skool, whilst cool, isn't always the best performing. That HG70 cassette will definitely shift better than the uniglide sprockets.
Course, it's all academic if you've only got external threads on the freehub body... but if your hub can take a HG lockring, go for that cassette.
'Ope that 'elped!

Howdy Simple,
You're gonna need some deeper-drop brakes (as you probably guessed! ;-)) and CRC do these puppies: http://www.chainreactioncycles.com/Models.aspx?ModelID=34704 which'll work nicely.
If you're feeling flush and want some brakes that are the bee's knees, the higher-specced R650s are defo worth a look: http://www.chainreactioncycles.com/Models.aspx?ModelID=27807
Good luck!
Please allow me, sir, to make a small correction to your thoughts ;-)
Pictured above is an example of what vegans who are...

...might eat.
Hope that clears things up a little.
