Most meats that are eaten are from vegetarian or vegan animals. It tends to be more tender and makes animal husbandry easier. Farmers do not have to grow other animals to feed their stock. It is therefore more environmentally sound as well although the probable reason is the tenderness of the meat and the fact that vegan animals tend to come in flocks or herds whereas carnivores come in smaller packs.
These days, it would appear, that some animals are fed on processed meat and the consequences (mad cow disease for one) are not pleasant.
Fish is interesting. While much of the sea fish that we eat is plankton eating, others are carnivores or omnivores. Oysters are plankton eating.
