To get a good flavour of cycling in Am'dam have a look at http://amsterdamize.com/
It's run by a Dutch media guy that lives, works and cycles there. If you like the trad Dutch workbikes or need any bike repairs this place is run by an expat American guy, and is very helpful: http://www.workcycles.com/workbike/
A Brit that lives in Assen, makes baskets for bikes, runs tours, and very clued up on cycling around the Assen region: http://hembrow.blogspot.com/
If you haven't cycled in Holland before you'll wish you had, but then you'll wonder why you came back here...:-)

Sturmey X-RF5 hubs are usually 36h or 28h for folders, so depends on your rim if you can reuse it or not.
Respacing is usually ok but can give problems with gearchanging if it's overdone.
http://oldbiketrader.co.uk/display_Sturmey_Archer.php?options=newhubspost has the hubs for sale at £75 + del.
He knows a ton about sturmey hubs, and is very helpful, you can call him on 020 8306 0060.
I've no connection at all with the above business.
I ocassionally use a fixed S3X 3-speed hub with a WI freewheel if I feel like lazy riding on the local hills. This hub takes a standard Shimano cassette cog(use Surly cogs, they fit better) for fixed, or a standard threaded freewheel.
