-Brakes: currently have cantilever and want to replace with calliper brakes.
That feels unusual, a 70s Peugeot with cantis? Anyway, the holes for mounting caliper brakes won't be drilled to take a recessed allen sleeve bolt, so you'll need a nutted set. I've got some Weinmann type 500s that I'd be happy to sell: something like this, but you'd want to check the reach you need first.

Hi. Thanks for your reply. I think actually I may be misnaming them as cantilever brakes. I think correctly they are centre-pull brakes (see image), and I am after side-pull brakes.
I would be happy to buy the Weinmann brakes, providing the reach is OK. I will check this evening and let you know - thanks for the information.

and yes I had come across this problem with the recessed allen sleeve bolt when I tried to fit on a caliper brake I had on another bike.

Those are centre-pull calipers and quite nice ones. Weinmann 500s are probably not a massive step-up in terms of quality or power, but if you want to go for side-pulls, they will have a similar look. Let me know.
Incidentally, what's the bike? Those brakes indicate it might be quite nice. Are you sure you want to convert it?

OK, so to the best of measuring ability, the reach is 56/57 mm (centre of hole to centre of rim).
The bike is a Peugeot PX10. Yeh I do suspect that doing a ss conversion on this bike might exasperate the purists! (especially as it is very well maintained components wise). I have been after the bike in my size, this colour for a few years, always with the intention of converting it and was finally able to pick it up on ebay. Since getting it I have been considering keeping it as it, as it certainly does ride very nicely - but overall am still feeling inclined towards conversion.

based on the sheldon brown info, sounds like that reach could make things a bit tricky

56/57mm is a slightly awkward number as I think it sits right on the limit of a lot of calipers' range. They quite often seem to be something-57mm.
Please just leave that bike exactly as it is. What will actually be left over from that in a fixed gear? Frame, forks, bars, stem, post, saddle and possibly brake levers and front wheel? I think it's just not worth it. I'm not much of a bike purist and I've put modern bits on my own early-80s bike, but mine is a fairly bog-standard light tourer, not a top-of-the-line racing bike. I'm sure you can find another frame to build a fixed gear on.
I have a 70s Peugeot that I am in the process of converting to a single speed, whilst trying to keep the cost as low as pos. So if anyone has the following that they would be keen to sell, or alternatively any recommendations for good value new stuff, please let me know.
-Single speed rear wheel: after a vintage-looking wheel, for want of a better word.
-Brakes: currently have cantilever and want to replace with calliper brakes.
-Brake levers: after silver 'BMX' style brake levers.
