I have a NOS 3ttt 4G XL 120 mm which came with a shim for use on either 1" or 1 1/8 th. You can have cheap. (£10)
I use this set-up on my road bike and it is perfectly secure. -

Yah I've got a shimmed thomson stem currently, but is hardly the most elegant solution.

A shim is perfectly sound engineering and suffers from no unwanted movement. Remember the stem should be done up to recommended torque which should allow no movement in use but a bit of "give" in the event of a crash.

Buy a Cinelli Sesamo.

I know what you mean about a shimmed 1&1/8” stem not exactly being elegant. Not sure if that ^ is elegant though.
