With Black DT Champion spokes.

Only been used on the road. Not seen more than 500 miles.

What cassettes would these take Pete?

I only really know about Shimano MTB cassettes, in which case 8,9,10 & 11spd are fine. I believe 11spd road is a different width and obviously, SRAM has the XD driver instead.

I've never even seen a Campag cassette.

I've got an 11 speed road freehub for a 240, are the DT Swiss freehubs interchangeable throughout the range?

Unfortunately no. The 370 freehub uses a pawl system, rather than the star-ratchet.
