Spyres maybe fine, but full hydro is much better and lower maintenance.
Di2 is nice but probably not appropriate for a commuter bike, mechanical 11 speed is pretty awesome.

cable to hyrdo need the cables replacing probably more often than full hydro need servicing
full hydro has greater stopping power, less force required to activate brakes, and arguably better modulation. it simply feels better
no need to faff around with compressionless housing etc to try and get the cable system to feel better than it is in its stock state and cable will never feel as good as full hydraulic

Between Walthamstow and Clerkenwell, via Totty Hales on the way in and Lee Bridge Road on the way back, absolutely terrible, they've resurfaced much of the A10 which is some sweet relief

They are good enough, yes, unless you are a 200kg heffer.
DJ is right about the hydro stuff feeling nicer though.

I hear ya. It's on the nice to have list for me. Rented a ultegra hydro hi-mod crabon bike in Malorca - wasn't really convinced, maybe they were shonky or something; there was none of the tasty hydro power and modulation.

Having ridden Spyres and hydro (and the abomin-fucking-ation that are BB7s), the hydros win hands down. Easier actuation, more modulation than you know what to do with, and much more power should you need it. They are virtually maintenance free too.

Is it still a project if you're just speccing it up and paying someone to build it for you?
Anyway, I've outgrown my Cinelli alu road-racer, as I now ride 15 miles of pot holes, broken tarmac and crumbling speed bumps a day, and it's doing my arse in, so I've pulled the trigger on a new bike. I've chosen Condor as it's been my LBS for several years and I've grown rather fond of their high prices and prestige. I'm also crossing the floor and sitting with the Shimano lot. I know it's cooking-quality, but my Campag Veloce has given me no end of arse ache so I'm relishing the change.
Sticking with standard purple, partly for cost reasons, and partly because I fell in love with this Mercian many moons ago and it's not far off:
