Your tyres are "beloved"?
23-on-23 is fine but when they wear out, there's no reason (aero considerations aside) not to get 25mm tyres (or 28mm for that matter).
Your tyres will come up larger on wide rims, so if you're using an ultralight (ie thinner) tube that might be stretching it too far.
Making butyl tubes thinner than normal to save weight is a daft idea: do your butt and wrists a favour and get some latex tubes!
Are you sure it's the valves rattling? I can't see how a properly seated, inflated tube can allow the valve to rattle against the rim.

Yes, my tyres are beloved, creamy fast Rubino pros. To be honest, I haven't tried much else but if it ain't broke...
Stuck some 25s on and didn't like them so went back to 23s but with some slightly more sensible inner tubes.
I can't imagine what else would be making that rattling noise, probably something to do with the silly deep V rims so hopefully now I have some more reasonable rims the rattle will depart too. Turns out the airstops aren't threaded either...

It's been a while since I've built anything so I'm a bit rusty.
Got a delightful H Plus Son wheelset with 23mm rims. Just wondering if it's okay to run my beloved 23mm rubino pros on there or if i should size up to the 25mm ones?
Then the follow up question from that is whether, with 25mm tyres, I can get away with an 18-23 tube? And if not, can anyone recommend something similar to a Michelin AirComp Ultra Light that will do the job? Actually, having said that, I wouldn't mind something with a thread on the valve to stop the rattling? Or does anyone have a cunning trick to stop the valve rattle?
Ramble over, any advice much appreciated.
