Is it just a normal cog? Could I put multiple gears on it?
(I don't know anything about coaster brakes, in case that's not obvious!)

Initially I would have said no.
This is what the cog side looks like:
It uses a particular cog that is different from a track cog. AFAIK they are the standard type for most hub gears - which are easy to find.
But now I'm looking on the web it looks like there might be a way to make them multispeed. I'd still say probably not unless you do something very funky.

Hmm, that body looks to me like it was designed with room for more gears... Might be as easy as buying a new free hub body!?
But still beyond what I can be arsed doing! Sorry!
And yeah they are pretty standard hub gear cogs, you can also get carriers to put them on fixed wheel threads...
