You're right, LBS is wrong. I'd recommend going to a different bike shop - one which knows what they're talking about, for starters.

Okay so what could be wrong the cassette looks far to close to the spokes and if you put the chain on the big sprocket t it actually catches on the spokes

Assuming the cassette isn't actually jamming on the hub body, it should be fine. If the derailleur is catching the spokes you need to adjust the limit screws, which is an easy job and something a bike shop really should know about. I second Danstuff's recommendation.

Don't think it's the deraillier it's more like there's a spacer missing from behind the casette?

Sounds like an issue with your mech rather than the freehub. As well as checking the limit screws, check the alignment of the rear hanger. If it's got bent inward slightly that could be the cause of it rubbing against the spokes.

So I've played with the adjustment screws now when I'm in the small ring at the front I can get the big sprocket but not the smallest, when in the big ring I can get the smallest sprocket but not the biggest. Also when in the big sprocket the end of the rear mech is rubbing on the spokes. Possible it's a short cage mech or too short cage that's causing these problems?

I wouldn't worry about not being able to get small/small and big/big anyways, that's cross chaining and knackers your drivetrain up putting undue pressure on your chain with sideways forces you don't want.
Just another thought as to why your chain/cage was hitting the spokes, has the back end taken a shunt at any point, you might want to check the alignment of the stays in case it is that that is throwing everything out of kilter.
I have a set of these on my road bike I'm using campagnolo 10spd but couldn't get into the big sprocket on my casette took it to the lbs and they have said its a 9 spd free hub body I thought campagnolo was 11/10/9 spd compatible?
