Well for that lovely frame you would really want to go for the Wolber ~Profil A rims
They are ages with the frame and are far and away the best looking rims, they build in to a nice wheel easily as they are pretty rigid.
Just my view !
Post some pics when your done.

Hi All,
For my elderly 753 SBDU frame, I've a choice of four pairs of wheels; nothing, I'm sorry to say, as good as what most of you guys will have fitted.
I'm finding very difficult to decide which wheels to choose, so I'd appreciate comments as to suitability; I've a pair of Mavic Open 4CDs - black rims in very good condition, I've a pair of Wolber Profil A - black rims in very good condition, a pair of silver Mavic Open Sport (new) and a pair of silver Mavic Open Pros - which are brand new. I'm discounting the Mavic Open Sports, since I assume the Open Pros are better. In fact, I'm leaning towards the Open Pros - but the Wolbers seem very light.
Cheers for any advice; the trouble with hoarding so much stuff, is that it makes it difficult (for me, at any rate) to make a decision on what to fit.
