I went down through Tadworth and back up along the m25 through country lanes.
lovely.
Hurst Road going west is absolutely spectacular. -

I went round that way on Saturday with a mate who lives in Wallington. I followed him I have no idea really where we went from Wallington (Sutton) up to Epsom in a big loop, and we went through Bansted and near Coulsdon.
There are some really nice hills for going up and down. I recommend it, sorry I cant give more useful information. -

I usually ride Ruxley Lane - Horton Lane then into Epsom then the Langley Vale road - then do a left on to headley road - which leads you to Box Hill either along the surrey cycleway which takes you to Mickleham or you carry straight on and go around the backway to Box Hill (if you want to go there that is).
There are a lot of country lanes around epsom too - I will look up and remember the names of some of them but you can find them easily by exploring/taking wrong turns.
Some nice roads around the epsom racecourse/downs too.

Chalk lane is a nice steady long climb - it starts behind Epsom Hospital and finishes at the top of Epsom by the Downs.
Tiley lane is also quite nice, though you do get a few cars now and again but most drivers around there are used to cyclists. it's just the other side of the M25 Near Hurst Lane and Hurst Road you mention.

+1. could go to tadworth, including short climb up ashhurst road. then dorking road takes you most of the way there
downs road and langley vale road nearer epsom for a little climb.
There are some bad and some good roads around there, i know, but any advice on a GOOD ROUTE?
I want to go for a 10-20 mile ride tomorrow, but don't know where...
