I have one you can have for £70 including an 18 tooth freewheel. I paid £65 for it and £10 for the freewheel.
it's a system X hub hand-laced to a Mavic MA3 rim running dead true.
it was barely used when I got it and has seen another 40 miles on a bike that was waiting for a sutrmey hubgeared wheel to be built.
I appreciate you might not want to spend that much if you're wanting it for your project puch (which, by the way, looks nice).

just use any wheel with a screw-on cassette, replace it with a single speed freewheel, and get your local bike shop to re space and re dish it accordingly.
You could manage it for under £20 if you tried hard enough... -
