length of steerer required is? Steel/alu/carbon?
I have forks- in steel- Giant OCR drilled 17.5cm steerer/3.75cm thread,
and undrilled track forks 18.5cm steerer/9.5 thread
also some unthreaded too...

Sorry, steerer needs to be 160mm to 170mm with at least 40mm of thread.
Preferably lugged steel, something that kinda looks like...

Why do you think you need 40mm of thread? Have you looked at a threaded headset? there's thread in the top nut (max 8mm) and the top race nut (again max 8mm) - usually 20mm (or even 1.75cm) is plenty unless you have a short headtube on the frame and plan on using lots of spacers...? That said if the thread really needs extending I have the tool to do it, as long as the chrome doesn't extend to the bit of steerer that needs threading (thread tools don't like chrome).

Headtube is 120mm and the stack height of the headset is 36mm. Am I being an idiot... Will this fork be ok?

Well you need a 156mm steerer of which max 20mm needs to be threaded. Anything longer is a useless appendage and can be lopped off :) The Colnago one will be fine as long as the chroming does not go further than 136mm up the steerer from the crown, you will have to enquire of El_Diablo... chrome can be removed but it needs to be done properly so you would be better off finding a fork that does not need chrome removing on the steerer.
