lovely lentil soup
200g red lentils
1 medium onion
2 cloves garlic
1 litre vegetable stock
Juice & rind of 1 lemon
½ teaspoon ground coriander seeds
½ teaspoon ground cumin
½ teaspoon black peppercorns
2 tablespoons olive oil or vegetable oil- Peel the onion and chop in half. Slice finely. Peel and crush the garlic.
- Heat the oil in a large pan and add the onion and garlic. Sauté gently for 5 minutes, until softening.
- Crush the peppercorns in a pestle and mortar (or grind coarsely in a pepper grinder).
- Add the pepper, cumin and coriander to the pan and cook for a further 2 minutes.
- Add the lentils, lemon juice & rind and vegetable stock. Cover and simmer gently for 25 minutes, until the lentils are soft. Stir regularly, to stop the soup from burning to the bottom of the pan. You might need to add more water, if it gets too thick. BLEND and season with salt to taste. I sometimes add a couple of sticks of celery and a carrot for a more general veggie type vibe.
- Peel the onion and chop in half. Slice finely. Peel and crush the garlic.

here's some veggie soups:::
Spicy Bean Soup.
Ingredients
2 large potatoes
2 carrots
1-2 sticks of celery
1 leek
2 tsp chilli powder
1 garlic clove
1 1/4 pint of veg stock
1 tin of chilli beans (the ones in chilli sauce make it nice and spicy)- Chop all of the veg into nice size chunks
- Stir fry the leek for a few minutes
- Add the rest of the vegetables, garlic, chilli powder and stir fry for 1 minute
- Add the stock and the beans in the chilli sauce and gently simmer unter veg is tender and liquid has reduced a little.
Red Lentil Soup:
1 medium sized onion
3 medium carrots and potatoes
1 red pepper
125g red lentils (soak for 1 hour prior to cooking)
1 teaspoon of paprika
1 teaspoon of turmeric
A pinch of cinnamon
A pinch of cayenne pepper
A 400g can of tomatoes
750ml of water or vegetable stock
1 teaspoon of basil
1 bay leaf
Salt and pepper- Chop the vegetables finely.
- Heat 1 teaspoon of oil and fry spices.
- Add vegetables and lentils and stir and coat vegetables with spices. Cook for about 5 minutes.
- Cut up tomatoes, put them in a measuring jug and add enough water or stock to make 1.2 litres.
- Add this with basil and bay leaf to pan of vegetables. Bring to the boil and simmer for 40 minutes or until the lentils are cooked.
- Add salt and pepper to taste. Add more water or stock if necessary.
- Chop all of the veg into nice size chunks

Ah the soup diet, I went through a very similar thing a few years ago except my broken jaw was due to a pissed fall over rather than a bike crash. Lost a lot of weight in the first few weeks, and then discovered the pure joy of inhaling over cooked spiralli pasta. Felt amazing to have even slightly solid food in my stomach for the frist time.

This is by far the best soup i have ever had! Really easy to make. I use about 30g - 50g more chorizo than they recommend and they recommend 1 onion but i prefer half.

Hey Dammit - it was good to meet you at Souths the other day. Hope you're not feeling too disconsolate on your other liquid diet!
I'm a shit cook, but even I manage this one:
1 x Butter Nut Squash
4-5 apples
Honey, chilli flakes, stockCreme fraiche (or cream cheese)
- Heat up a small amount of olive oil in a baking tray
- Cut up your squash and apples into smallish chunks, cover the base of the tray, drizzle liberally with honey and chilli flakes; then roast until soft (25 minutes or so in a hot oven'll do it)
- Decant the cooked gubbins into a pan, on a low heat and blend it up
- Add stock to dilute to a soupish consistency and salt and pepper to taste
- Take it off the heat and stir through a spoonful of the creme fraiche
- insert straw and enjoy

It has to be done.... can be frozen as well... i used to make it in massive quantities and freeze it in individual bags. Great with some tabasco as well.

Chorizo and Chickpea soup with potato, chilli and saffron. Serve with soda bread.

if u do a roast chooken on sundaze then u are in for a treat on monday!
sweat off 2 x medium red onions finely chopped.
add 2 - 3 large garlic gloves that have been squashed.
add 4.5 litres of water and bring to the boil.
add the chicken carcass, skin and funny bits and all... don`t discriminate, it all becomes stock.
chop up two decent sized sticks of celery and add them two the mix.
add two bay leaves.
put the lid on and leave to boil for about an hour.
after about an hour remove the carcass and any bones that may have fallen off.
you should now have a carcass with no meat on it.
throw the carcass in the bin.
get 2 large potatoes and two large carrots.
chop them up and throw them.
you can also add anything else you like to this after here eg: butternut,pumpkin etc etc
add salt, pepper and chilli to taste.
you can also add paprika or curry powder, it depends on what kind of flavours u like.
replace lid and let it cook for a further hour to 2 hours.
it should be boiling but not too vigorously.
remember that when u put the lid on things they tend to boil more vigorously as the heat is condensed into a smaller space.
after the alloted time remove from heat and get a potatoe masher.
squish squash the mix until you reach your desired consitency.put it in a bowl and enjoy with some homemade bread rolls.
