you could ghetto speed it, leave all the cogs and chose one that gives a straight chain line.

Its either get a conversion kit for the cassette hub .................... very easy to do
Or................ Remove the sprocket block
Replace the block with a 1/8th or 3/32 freewheel 16-17-18-19-T
....................Respace to align with the chainring
& then ..................Redish -

If you are going to give advice to a newbie try to use the correct terms to describe the parts of the wheel/bike he will need to research about before he converts, otherwise he will waste a lot of time and effort before he realises you are in fact talking out of your arse. Now run along and check out the captains web site bicycle glossary again and again until you get it right -

First of all, how do you know he's a 'newbie'? He's might have been riding a bike a hell of a lot longer than you for all you know. You talk about not being rude.
Second of all, re-read the man's post. All he says is that he has a freehub, and it has a 5-speed cassette on it. How do you know it's not a screw-on cassette?
Also, of course you wouldn't add spacers and redish.

Can I get a conversion kit that would fit onto the freehub thats on the bike now? At the moment there is a 5 speed one on there but I would like to keep the old 27x11/4 wheel if poss.
Well, we're only going on what he says. Yeah they may be rare, but it's what he says he has.
However this is really arguing semantics. i'd recommend that he just takes the derailleur off and runs the best combination of chainring/sprocket that gives him the best chainline.
